Two or more dinners will be held in the Dining Room of York Mansion House. Each dinner is cooked by a leading Yorkshire Chef and features the produce of a well defined small geographical area in Yorkshire.
Rob Green (from Green's of Whitby), for example, will delight us, this evening, with a menu focussing on Whitby fish and produce from the North Yorkshire Moors.
The banquet menu has changed a lot over the years, from vast offerings with unimaginable amounts of food, to being narrowed down to individual courses.When I was at college we were still taught how to prepare 13 course banquet menus. Black Russian cigarettes were actually included as a course !
Nowadays these menus would probably only be found at regal functions or probably an officers mess function in the Forces.
Fine dining and tasting menus, now, I suppose are the new banqueting menus.
All the ingredients in the menu I have produced for this prestigious occasion can be found in many banqueting menus from years gone by.
Lobster and turbot would have featured prominently as would preserved ginger, tarts, fruits and cakes.
I have included a Yorkshire curd tart for dessert as these were synonymous with festivals and celebrations around the county.
